Have you got the need for seeds?
Today is National Pumpkin Day – which makes sense, because this is right around the time you're probably thinking about carving a pumpkin. If you are, that means you're going to have easy access to a whole lot of pumpkin seeds, which you can set aside, toast with oil and salt, and use in a variety of ways. Here are some ideas to get you started.
1. Put them on top of salad
Pumpkin seeds make a great topping for spinach, kale, or arugula salad – they give it a little bit of much-needed crunch. Try this recipe or this recipe, or improvise to your heart's content.
2. Put them on top of soup
What better to pair pumpkin with than more pumpkin? If you're a fan of pumpkin soup (or squash soup), try topping it with a few roasted pumpkin seeds – you're sure to get soup-er results!
3. Put them in granola
You can add pumpkin seeds to store-bought granola to give it a fun Fall twist – or, if you prefer, you can make your own granola from scratch.
4. Eat them with salt and oil
Pumpkin seeds make a great snack on their own – just roast them with a bit of salt and oil and eat them hot from the oven.
5. Put them in pesto
If you're not a fan of pumpkin seeds as-is, you can grind them up and put them in homemade pesto for something a little different.
